Baked Cucumbers with Cheese
2 large cucumbers, peeled
1/2 8-oz. Container low-fat sour cream
1/2 cup grated Gouda or Gruyere
a pinch of ginger
a pinch of nutmeg
salt and pepper to taste
butter, as needed
1. Carefully slice cucumbers in half lengthwise and with the help of a small knife, remove seeds with great care. Place the cucumbers in a buttered baking dish.
2. In a bowl, mix well the sour cream, grated cheese, ginger, nutmeg, and salt and pepper until the mixture turns into an even, creamy consistency. Add more sour cream and cheese if needed. Spread this mixture evenly over the sliced cucumbers and place small pieces of butter on top.
3. Place the baking dish in a 300* oven and bake for 15-20 minutes. When the cheese begins to brown slightly, the cucumbers are ready to be served.
